					<description>I've eaten cheese I've left out overnight or at least for a few hours, and it's ok.  Just go by taste... if it tastes rank, it probably is!

My mozzarella gets blue mold.</description>

					<description>FYI: Cheese can be frozen. When it thaws, it becomes crumbly so would be hard to put in a sandwich, but for cooking it’s GRATE.</description>

					<description>It also depends on how processed the cheese is.... Funnily enough, the more preservatives are in it, the more likely it is to get gross if not refrigerated.</description>
